Shawarma Marinaded Chicken
4 each Chicken Breasts
Ingredients for the marinade
2 cups yougurt
1 cup white wine
1 cup red vinegar
¼ cup pureed garlic
½ t all spice
1 t cumin
1 t coriander – ground
½ t ground cardomom
1 T kosher salt
1 t cayenne
1 cup oil
1/2 cup thinly sliced cucumber (no seeds)
1/2 cup halved cherry tomatoes
6 crispy smashed potatoes (see recipe)
Falafil Relish to taste (see crispy smashed potatoes recipe)
In a large mixing bowl, place all ingredients. Mix thoroughly. Even coat all chicken. Cover, refrigerate – marinate for a minimum of 2 hours, maximum 24 hours
Grill chicken for 8-10 minutes.
For Building the Salad
Place a layer falafel potatoes on bottom of the plate.
Take Sliced Romaine Lettuce and add the halved Grape Tomatoes and thinly sliced cucumbers. Toss in creamy sesame dressing and mound on top of potatoes
Slice chicken on the bias and lay up against the salad.
